Ingredients:

  • 4 black cod fillets
  • 1/4 cup white miso paste
  • 1/4 cup sake
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tbsp soy sauce

Instructions:

  1. In a bowl, whisk together miso paste, sake, mirin, sugar, and soy sauce until smooth.
  2. Place the black cod fillets in a shallow dish and pour the miso marinade over them. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the fillets from the marinade and place them on a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes, until the fish is caramelized and flaky.
