Storing Frozen Coho

  • Keep It Frozen Until Needed:
    Store your coho in the freezer at 0°F (-18°C) or below, in its vacuum seal. The seal protects against freezer burn.
  • Label and Date:
    Note the date on each package. For the best flavor and texture, enjoy it within a few months.

Thawing Coho

  • Refrigerator Thawing (Recommended):
    Open or remove the vacuum seal first, then set the fish on a plate on the bottom shelf of the refrigerator overnight. A 1 lb fillet usually thaws in 8-12 hours. Cook it within a day or two. Vacuum-sealed fish should not thaw slowly while still sealed.
  • Cold Water Thawing (Quick Method):
    Keep the fish sealed and submerge it in a bowl of cold water. Change the water every 30 minutes so it stays cold. A 1 lb fillet usually thaws in 30-60 minutes. Cook it right away.
  • No Time to Thaw?:
    Cook it straight from frozen: remove the packaging, rinse off any ice, pat dry, oil and season, and bake at 425°F. Plan on about 50% longer than a thawed fillet.
  • Never on the Counter:
    Thawing at room temperature lets the outside warm into the range where bacteria grow while the center is still frozen.

Preparing Thawed Coho for Cooking

  • Pat Dry:
    Remove the fish from its packaging and pat it dry with paper towels for a better sear on the grill or in the pan.
  • Check for Bones:
    Run your fingers along the flesh to feel for pin bones, and pull any you find with fish tweezers or clean needle-nose pliers.
  • Don't Overcook It:
    Wild coho is leaner than farmed salmon, so it cooks fast. Pull it as soon as it turns opaque and flakes with gentle pressure (145°F at the thickest point).
